Cerro Las Ranas (“Hill of Frogs”) coffee is named after the farm’s lagoon, which is home to thousands of frogs. The farm is located in Apaneca, within the department of Ahuachapán, El Salvador.
The coffee is produced by JASAL, a family-owned operation where José Antonio Salaverría and his sons take great pride in meticulous attention to detail—from year-round farm management to quality control in the cupping lab, and everything in between.
For the pulped natural process, also known as the honey process, JASAL carefully selects perfectly ripe coffee cherries, removes the outer skin, and then dries the beans while they remain covered in their naturally occurring mucilage. The beans are spread across clay patios and turned frequently to promote slow, even drying, resulting in a coffee that reflects the care and precision invested at every stage of production.
