This coffee comes from smallholder farmers in Kebele Buku Abel, in Ethiopia’s Guji Zone, a high-altitude region ranging from 2,100 to 2,300 meters above sea level. The people of this area are known as Guji Oromo, and coffee farming has been an integral part of the culture in these highland communities for generations.
Guji is distinct from neighboring coffee regions such as Yirgacheffe and Sidamo. Geographically and culturally, as well as in the cup, these southern Ethiopian coffees have their own distinct character while sharing some broader regional traits. In natural-processed coffees from Guji, that character often comes through as intensely fruity, juicy, and aromatic.
The washing station is privately owned by a family that works with several hundred smallholder farmers in the surrounding villages while also processing coffee from their own farm. Exceptional attention is given to hand sorting and the removal of defects, which plays an important role in the quality and consistency of the coffee.
Unripe cherries are removed when the coffee is delivered, using both water flotation and careful hand sorting. The sorting process continues throughout the 2–3 weeks of drying on raised beds, where the cherries are regularly inspected and turned. Removing unripe cherries at multiple stages is essential to achieving greater uniformity and contributing to the clean, vibrant cup profile that defines this coffee.
