Gathaithi is both the name of the washing station where this coffee was processed and the local Farmers Cooperative Society (FCS). In Kenya, washing stations are commonly referred to as "factories." Each factory serves a specific micro-region and is typically one of several stations operating under a larger Farmers Cooperative Society.

At Gathaithi, cooperative members deliver freshly harvested coffee cherries for processing. The cherries are first pulped using a traditional three-disc "Kenya-style" pulping machine, then fermented overnight. After fermentation, the remaining fruit is washed away with clean water, followed by a fresh-water soak before the parchment coffee is spread across raised drying beds to dry evenly.

The cooperative currently has approximately 1,250 members. Farms average around 1,700 meters above sea level, although elevations vary throughout the region.

This lot is graded AA, Kenya's largest screen size classification, measuring 17–19/64 of an inch. (For comparison, AB beans measure 15–17/64 of an inch.)
